1) the Vitamix blender can chop. More specifically wet chop where you’re floating your veggies in water, at a lower speed. Picture attached ( not mine) and I’ve done it plenty of times. If you’re particular about perfect cuts, this may not be the method for you.

Depends on your water hardness, you set that. Then also depends how much water you use. House of 4, I go through 16-20 bags annually. Garden, hot tub, car washing, laundry, dishwasher, showers, etc. So we’re a high usage household.
I don’t know of a system that doesn’t use salt. What if you got the biggest setup and pay someone to deliver and pour in the salt two times a year? I don’t have anything fancy just the biggest unit Blain’s farm and fleet sells. Brand is Addie.
Do you ever use the Vitamix to shred the ingredients? I don’t have a favorite, I do hand chopped, mandolin, store bought shreds, and sometimes the Vitamix shred. It’s super fine, take less time to meld, and is just texturally different. I usually use the KFC copycat recipe for the Vitamix slaw...
Looks steampunk to me. Renaissance fair may be a good place to rent/sell it. I think your asking price determines your rental price to an extent. Hog cooker rental on Craigslist is around $250. Look there and marketplace to get ideas. Good job, good luck.
I’ve launched pies that end up looking like Texas or Florida. It’s gotta be my dough. We still enjoy it. Just not very instagrammable. I went to screens, now I kinda have sticking issues. Again I think it’s the dough, one day I’ll listen to the experts here and make a proper dough.

At least you’re aware of it and can plan for a BIG BBQ. I got busy and missed the demise of my garage fridge, didn’t even have a chance to throw a bbq. Worst of it was all my homemade sausage and smoked meats and cheeses were in there. Couple more weeks and you can have a giant 4th of July bash.
