    Not an experienced smoker here, but "Black Soot" means you have a flame problem or those wet chips are throwing soot up.   Like Venture said, you should a nice blue flame with a touch of orange/yellow at the tips for a clean burn. And use dry chips.  Wet chips are for grills not smokers.
