Since that first Saturday smoke, I've thoroughly broken my smoker in. In three weekends I've smoked a total of 10 racks of St Louis cut ribs, and a 9 lb pork butt.
I love this thing. I am enjoying it and I am figuring out how to maintain my temps a little better so I don't have to babysit it...
I think I've figured it out. What I do now is use about 35 briquettes up as close to the smoke chamber (all the way to the right) as possible. And then I put in unlight briquettes when needed to the left, not on top.
Depending on the smoke, once I make it all the way to the far side, then I...
This smoker is absolutely not a good smoker. The firebox is a joke. The door shut still wiggles loose about a half inch. The hinge is so weak.
Very thin sheet metal. Smoking with this smoker in cold weather, I'd imagine it's a nightmare.
Having said that, I didn't expect much more from it at...
Thanks all, I had to babysit the fire the entire time.
I'm smoking again on Sunday and can't decide if I should just do more ribs or something else.
A butt or brisket. It'll be just for myself...so idk
Will be more pictures to come!
This weekend was the first weekend with my smoker. I did my seasoning smoke and I could not maintain my temps lower than 300-350! I got discouraged and nervous.
For the seasoning smoke I used way too much fuel.
I got the fuel situation settled the following day before I began the cook and i...
I was able to just cut the number of charcoal by about 2/3 and had a nice, reliable fire. Started with coals and then switched to hickory wood chunks for the remainder of the burn. When temps rose higher than 260 I would just open the lid to the fire box and let it settle for a bit.
Then i'd...
Hey guys, I am new and just did my seasoning smoke today and I was planning on seeing what kind of temps I was going to get on my smoker.
I am extremely discouraged right now! My temps sky rocketed to close to 350 F for a good 45 minutes! What on earth did I do wrong???
Cheap Offset Smoker -...
Everyone, thank you so much for the responses! A very hearty welcome!
Joe,
thanks for the input. It's going to just take some time for me to figure out 1. what i'm doing and 2. what temps i'm going to be able to achieve on a consistent basis.
Jasper7,
I was at the store today and I put my...
For a 22.5 WSM I'm looking at close to $500 before my first cook; 400 alone for the smoker. Plus charcoal, wood, temp gauge, and a few other odds and ins.
No doubt it's a good smoker, but I'll have roughly 75 less sq inch going this route for probably $175 less.
Joe,
What temps are you...
UDS - ugly drum smoker.
I think for that amount of effort, I'll just stick with the plan of modding the side smoker. At least it will still look fairly decent.
UDS?
I briefly looked at a WSM but they look so small as far as cooking space and it's going to be about the same price.
I don't mind modding, it'll give me something to tinker with when I get home on the weekdays in preparation for the weekend.
I'll look into a UDS once I learn what it is!
Hey All!
I just recently moved to Hattiesburg MS from Pensacola FL (Gulf Breeze more specifically) and I think it's time to find a new hobby; and here I am.
I was planning on having a big cookout this summer to entice my friends and family up for a visit and originally was thinking "Crawfish...
