I cleaned both probes until they were shiny silver again. However, I am still getting the huge temperature variation between the smoker display and my external thermometers. The smoker continues to cycle the heating element off.
I cleaned them both up. They are both basically shiny silver now, but I am still having the temperature difference in the smoker continues to cycle the heat element off. What would be my next step?

To clarify some information:
Yes the smoker does appear to be cycling off before reaching temp. When I stand at the smoker and watch it cycle off the smoker controller reads 275 and cycles off but my thermopro only reads 200.
