Rob: kool smoke house. My only covers is I see you used OSB for t g e walla etc. OSB is loaded with chemical binders. Might be a health issue. Don't know for sure but I would check it out.

Chef:Dang I was going to throw a yollw on the smoker today and spaced it. Darn. I usually do them in foliage with s&p and evoo. . I will define try smoked some for Thanksgiving.. along with the turkey!!

Chef J. Great rub recipies. I have never smoked beef ribs. Bought some once and they were basically meatless. NEXT Time Will Buy THE FROM A Real butcher.
Brute:I have smoked several spatchedcocked turkeys. Always brine your bird. There r lots of good bribes on this site. For rub I do butter, evoo, and herb under the skin. Then a standard bbq rub of your choice on the bird. Good luck.
