Started with a Hickory Smoke at about 250° for 3 hours with a special injection and rub. Turned out great except the skin its not bight through a little rubbery but the inside is perfect. Any tips or suggestions ?

Hay I just got my first real smoker. It's an Oklahoma Joes Longhorn. I have already hit up YouTube and this forum for tips and what not going to me modifying the smoke cham tomorrow. Im seasoning the grill as I type this up going on 4 hours with a little bacon to boot. It's looking good so far...
