How I start and use my WSM....

Excellent step by step. I would like the DigiQ or Guru but do not want to spend the money. With this set-up it's hard to justify buying the draft system.

    WSM Mods

Not that is easy fast and SMART. It's the type of idea that screams, "why did I not think of that?" Nice job

Neighbor got a Brinkman Trailbalzer for Xmas...not going so well..advice?

Why is the basket in the firebox used? What are the advantages for using on instead of just the grates?

    My W.S.M. Plan

If you feel bad about making a profit on your work, then you are not cut out to be in business. Sorry, but that's the cold hard facts. The majority of restaurants fail in the first 5 years of operation. You will have to separate the personal vs the business side of you. This is not "wet blanket"...

No disrespect to Mr Minion, but I don't start a fire like that...

What's happening is that there is a "Delay" caused by all the unlit coals being in the way of the incoming air. So instead of the coals burning fast with the rush of air, the coals are taking longer to heat up. The automatic controller will then have a easier time setting the temperature because...

Adding Charcoal in the Wood Pan

Well you are entitled to your opinion, as we are all. I don't know how good or bad Eric is. BUT, you should include WHY you believe him to be wrong. Anybody can be a "bomb thrower". Now how about backing it up?

    SMOKER CLEANING

After you season the smoker, the layer that you build up, will effect how well the smoker works. If you remove this "insulation" layer you are starting all over again. But if you only use it a few times of the year, clean the walls. It will be years before you build up a good layer. By cleaning...

    Brinkman Smoke n grill problems

It is my opinion that once you get decent results with the Brinkmann, sell it, crush it or give it away. Then go buy a Weber Smokey Mountain 18.5" (what I have) or 22.5" model. They are a bit pricey, but the Minion Method works great with these units...

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

What if instead of trying to straighten out the door, create a "lip" around the door to make a better seal? Your hinges are offset so it should fit neatly around the entire door. It's more material and work but I think easier then trying to bang out the bends.

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

Sorry guys, I missed that it is a "reverse" flow. So it would make sense to put the vent on the firebox side. Let me also put out the question> Is a reverse flow system actually more complicated to build?

"Baron Von Schwein" 120 Gallon Horizontal Tank RF Build. QVIEW!

I would suggest 2 things. (1) put the vent stack on the other end of the tank away from the heat source and (2) make sure you do a test run BEFORE the wedding. There is nothing worse than all smoke and no pull.

    block smoker in progress!

That is a good size mass of material. Are the blocks hollow or did you fill them with concrete?

    Custom Smoker Build - Categorized

How long did it take to build the "Georgia" smoker on a trailer? Did you do it all yourself\sub it out. And the big question: overall cost? Very nice build.

    block smoker in progress!

It is early to see but it seems small inside. Where are the heaters, shelves vents going?
