I want to build one of these for a whole hog this fall. Thanks alot for the directions (on the site). I have never done whole hog, but I have eaten it before and am really excited to do it.
Man so many things I can do with my smoker that I never really thought of. I could use my smoker everyday with all the great ideas. I love almonds and cashews and the sweet, smoky and salty taste that would be created would be awesome.
Is there some way to preserve these or are they already preserved this way. Would like to do a big batch this way. Then use them in the future. Perhaps freeze in vacuum sealed bag?
I always do corn on the cob on the grill. Will do the soaked in the smoker next time. Top with a cajun compound butter and then some lime to finish. it is awesome!

OK, now I want to fire up the smoker and it's only Wednesday. Gotta wait till Friday or Saturday, but man that beef sandwich and wrap look fantastic. This guy sure can romanticize the smoking experience.
