WOW WOW WOW , looks great . I just installed a universal rotisserie on my " LA CAJA CHINA " cooking box so I could cook chickens and roasts on top of the box while I cook a whole pig inside . i'll be trying out the chicken this week

i have the MES 30 . I love it . heres what going on. when you first turn it on to lets say 230 the element turns on , when it gets to 230 it turns off , if you put the chips in at that time they won't start burning till the element turns back on to maintain the set temp
sorry oldshool no pics , I was just trying to see if i could cook a piece of meat with literaly no fat to be moist and tender and not a dried out piece of leather . I know most people would cook this to 125 or 130 I.T. for rare sammies
i was thinking about smoking an eye roast in an unconventional way , rather then cook it to an I.T. of 125 or 130 for a med rare hunk of meat that is sliced real thin for sammies , i wanted to basically cook it like a brisket . so i did . heres how it went . i found a 4# eye roast , injected it...
if you want a completely boned out chicken , go to you tube , search for Jacque pepin deboning a chicken . he shows you step by step how to do it . hes the best
I shoot mine and rub it . pay attention to what your doing (times and temp ) brisket isn't the easiest to get right , IMHO . I got faith in you , you can pull it off
looks great disco . try this little trick I learned a long time ago , don't let " the one who must be obeyed " see how much garlic you put in , just tell her you used less . she will then tell you "how much better it is with less" LOL
looks real good . I went to a cook out last Saturday and the flavor of the chicken was the best I 've had in a loooooong time . I ask if he used hickory chips and he said yes but also used some cherry . it was delish. i'll try some cherry the next time
