I made a batch of these two days ago, made a few substitutions with what I had on hand. Gave them a taste today, very good. Even my wife got excited about them. Tonight I'll boil a couple of eggs and put it the jar.
When I first starting smoking cheese I tried several different brands/types. Nowadays I buy store-brand cheddar and colby-jack. Our family and friends love it.

Pulled chicken from smoker. It didn't get as brown as it usually does.
Cut and vacuum packed. Next Saturday we will make the chicken salad. Easter morning we will stuff the salad in mini-croissants.

I had the smoker set for 275, once the IT hit 175 I turned the smoker...
