    I made a batch of these two days ago, made a few substitutions with what I had on hand. Gave them a taste today, very good. Even my wife got excited about them. Tonight I'll boil a couple of eggs and put it the jar.

    When I first starting smoking cheese I tried several different brands/types. Nowadays I buy store-brand cheddar and colby-jack. Our family and friends love it. Enjoy.

    Serious question here, do you need to clean them? I clean the racks but that's all. Mine would be like the one above if I cleaned it.

    Great looking cheese!  I like the mod you have on the MES.  I'm using the MES cold-smoker but detached it from the box with vent pipe.

    Pulled chicken from smoker.  It didn't get as brown as it usually does. Cut and vacuum packed.  Next Saturday we will make the chicken salad.  Easter morning we will stuff the salad in mini-croissants. Yielded 47.9 ounc I had the smoker set for 275, once the IT hit 175 I turned the smoker...
