    Make sure it's cured. We have coast live oak (which is red oak) and several other varieties in CA. All good, especially with beef.

    You know, it wasn't that hard to split. I've split some other live oaks where it felt like taking a sledge hammer and beating a tire, but this split up pretty well. Got rid of 3 or 4 partial rounds where it was either rotted out or the knots were too much, but overall, it wasn't bad.

    Scored a truckload of white alder rounds. It has a beautiful grain and has a nice scent when it’s split open. I got some planks out of it too. Can’t wait to start using it for cooking! Does anyone like using alder?
