I smoked some California Yellowtail last week and ended up making a portion into a spread for appetizer. Here is how I did it.
2 cups smoked fish (flaked)
4 Tbsp Mayonaise
6 Tbsp Sour Cream
1 Jalepeno seeded and diced fine
Greens of 1 scallion finely chopped

I had some on a salad last night, and might make a dip and make some mock tuna salad sandwiches with it today. Salt pepper, mayo, celery, onion and flaked SMOKED fish. Man that sounds awesome!

Agree with Dave, that it is not necessary, and I will be ordering the AMNPS in late June when I get back from my fishing trip (need all the extra cash I can muster). I just figured if Masterbuilt was offering a retro, I would take advantage of the free offer before its no longer an option or free.
