I just did my first one last Saturday, here's my experience (using the Masterbuilt 20070910).
1. I hear pork butts seem to be more forgiving.
2. I opted to not use any water.
3. I used a mix of mostly apple with some alder, but whatever you like - sounds like you're prepared!

BBQ probe is the shorter one and is used to determine the temp of the BBQ (smoker/grill/etc). It attaches to the clip that will attach to the rack or grate.
The food or meat probe goes on the other side and is the longer of the two, this would go into the meat itself to determine the internal...
I have a Weber Performer, my solution was to buy a Masterbuilt smoker, but did consider the Smokenator as an option. Seems to work well, and well enough that some people have tried making their own.

The Spirit might be in your price range, or look on Craigslist... some great deals can be had, just depends on your needs, but I'd recommend at 3 burner for more versatility if...

That brings up a question I have... does the built-in system not work for some? Seems to be doing plenty good on mine, but I see a lot of people adding the cold smoker kit or the AMNPS.
