Mine's been in the smoker for about 15 hours now and still have a few more to go. Low and slow, baby... :grilling_smilie: Using Pitmaster's Choice this time.
Tried this first time yesterday and sure turned out great.
Took a bit longer than I expected, and I hit a bit of time crunch, so I took it out at 200 and put it in cooler. It sat there for almost two hours while making a trip to the DFW airport and back to pick up my daughter and her fiancee...
Good point. Yeah, the tube is a bit on the long side and could be shortened quite a bit. I could even turn the elbows towards each others to make it even shorter.
Need to look into that. It's still work in progress, anyway...
That's on my list, too. Well..., actually tried to do it a couple of days ago, but had issues with keeping smoke going in my AMNPS (whole nother story...), so I had to ditch it. Will make some adjustments to my process and try again shortly.

Well... After reading a bit more, I saw a post from bear where he said you should dry the pellets before using. Maybe that will be the solution since they actually also went out when I tried having the AMNPS inside the smoker.
I could possibly shorten the pipe a little bit,mof necessary...
Smokng ham produced excellent results and no flare ups as the water pan was able to collect all the droppings. Yummy stuff that ham!!!
Having issues now with cold smoking, though... My pellets burn only about 1-2 hours and then die. No matter what I do I can't seem to get enough airflow throgh...

Other than using my own rub and not doing any glazing (never liked glazes) I mostly followed your instructions while doing my ham today and even the temp readings were almost spot on for the times/temps you listed and the ham turned out to be frigging awesome...
I'm new to using AMNPS as I used it the first time today in my MES 30, but to me it looks like the pellets didn't start burning properly to keep smoldering.
Mine worked great today when I made my ham.
Well... Had to pull the chip tray out, because otherwise the elbow wouldn't have gone all the way in. Now it's all connected and ready to go.
Paint and the shelf to the left side will come later.
