    Brisket Sausage in Sheep Casing

Just some info I learned from doing this. 1 sheep casing is more then enough to do 7 lbs of sausage (I probably have enough for another 4 lbs). The casings work better if you add 1/4 tsp baking soda to 1 cup water to soak them in. They get slippery and slide on and off the horn easier. When...

    smoked and fried

I have done smoked baked potatoes and they are fantastic. I bet you could do it that way and then mash them. Or make the mash and smoke like you would a Mac and cheese.

    smoked and fried

I have done a smoked turkey and then into a turkey fryer. It was very good. I bet you could do it with chicken too. If you did battered fried chicken the batter would probably lock the smoke flavor in. If you try it let us know how it turns out.

Memorial Day Beef Ribs and Leg Quarters (broke down)

Thank you very much. It was a very good day. I had planned on doing a brisket too but had no room on the pellet grill. I think I will do it this weekend instead.

    Pellet Grill thoughts?

So I currently have the Members Mark 36" Pellet Grill and love it. I have had no issues with it and no regret in buying it. They are currently on sale at Sam's as well. I chose this one due to the wood/charcoal door and side burner. I was looking at a recteq but opted for this one instead.
