I use coarse salt and pepper about a 1/2 cup each then Tbls paprika and rub liberally on the out side. Get grill to about 275 and put it on opposite the fire. Cook till meat thermometer hits 165 then wrap in foil cook to about 185.
I have been trying various methods of burning them. Tube, tray, etc. they burn good give off good smoke and will last a while if I pack the tube really tight with them. and they were cheap.
Don't knock ground meat jerky. I butcher my own deer and I cut the meat out between the ribs abd evry other place I can find. Can ene d up with extra 10+ pounds of grinds as I call em. Grind it use the HI Mountain Hickory and shoot opn to the trays with my jerky gun. Great for jerky or snack...
I have used them for grilling while camping especially at the coast to put shrimp on to grill. Works good for veggies too. Now I have the tube idea to kick around.
I found them on Craigslist. The guy is doing some work on a huge slice of a very old pecan turning it into a table top. These are shavings from the router. 55 gallon bag was $20.00. He told me when he was through with the pecan project he will turning some mesquite slabs into fireplace mantles...
I had bought a bag of B&B Apple before I read that they were not 100% Applewood. I smoked my 1st batch of bacon with it and ther taste was more like Oak than Apple. I have scored a huge bag of 100% Pecan shavings and although I haven't smoked anything with them yet I have been testing them. So...
That was right at about 18-19 hours. used apple pellets, however they weren't the 100% apple ones. These are mixed with hardwood. Didn't get much apple flavor. The smoke though was just about right.
I ate some this morning it was really good. This was the cajun version so a little more salty than I am used to but not bad. The other two slabs pepperered, sweet and smokey will get sliced lather and checked out.
That's what i figured the 1st half I didn't have too much trouble as the bacon was right out of the fridge. I will have to figure out something I don't have enough freezer space at the moment. Had a good deer season.
