    Keep a fire hot enough to burn your wood cleanly. Smolking wood leads to bad flavor. Well prepared wood burns more cleanly .

    When i first started to smoke, i would watch my cook. Now, i watch how i prep my wood and my smoke stack. The cook will take care of itself.

    Live oak is my go to! Kiln dry it in the cook chamber after pulling meat from the last smoke for the next smoke. Dries it on a molecular level. Good luck splitting it.
