My 30 lived under a water proof cover for a few months and has never been exposed to the weather. Since I got my 40 they both have been stored in a shed.
I've sent an email to CS and am waiting for their reply. I'll give it a few more days and call if I haven't heard from them.
Anyone have this problem? The other day while getting out my smoker I noticed a crack in the top of the door. This is a picture of the door on my 40. The same thing happened to my 30. Should I contact Masterbuilt or just fix it myself? The 40 was purchased on Black Friday from Academy and the 30...
The ocean perch and catfish were thinner than the salmon. They were more rubbery than the salmon. If I try a dry brine again I will brine for a much shorter time as you recommend. The salmon was a fillet cut into quarters with the thickest being about 1/2" thick. Thanks for your help and...
I have one and used it to smoke cheese earlier in the day but it went out about 2 hours into the cheese. Didn't think I;d need it because I wasn't cold smoking the fish.

Tonight I smoked some salmon. Last night I used a dry brine using 5-1 Brown sugar to salt. Brined in the frig over night. This morning I rinsed the fish in cold water to remove brine and let sit on racks in the frig for about 5 hour. Then to the smoker for...
I just bought the MES 30 and thought I'd try pellets because I didn't have the type of chips I wanted. The first load worked fine and produced smoke. After loading a second time I checked again in half an hour and there was no smoke. It seems that pellets do not burn down to ash so when you load...
I'm pretty new to smoking and have a few questions.
I notice most folks smoke salmon and trout. My question is can you smoke fish like cod, Mahi Mahi and other white flesh fish even shrimp?
So far I've smoked salmon using a wet brine and want to try a dry brine this weekend.
Thanks in advance...
Hi everyone.
I just started smoking this past summer. I'm interested in smoking fish, ribs, chicken cheese and more.

I'm presently using a Brinkman vertical electric smoker and a kettle type charcoal grill.
I'm looking forward from learning from the experts.
