Not sure of other PID controllers but the one i used has a relay built into the output. I believe it's a 12v 1a output which happens to be the same as the input of the solenoid.

That was kind of my plan too, if I bought one of these grills was to use a separate charcoal tray or firebox to better contain the charcoal. At $97 this grill seems like a winner. Hoping to see some on end of season clearance sale but no luck so far.

The masterbuilt propane smoker burner is a low pressure burner under 1psi. The bayou classic that you bought is a high pressure regulator. It'll work but don't expect the built in needle valve to give you that much fine control.
have you considered electric? but a lot of those guys end up using pellet trays to generate smoke, so you're back to the issue of not getting enough smoke flavor out of pellets.

bumping this back up. i've had this app on my phone for awhile but never really used it. i'm finding the keyword search feature is a huge time saver. i wish they had a notification/alert feature for keywords, so it would alert me if "brisket" ever goes on sale.
you should know that propane tank valves are designed to either be fully opened or closed. opening them part way increases the chance of a propane leak.
