Did a test turkey 2 weeks ago. Since it was the first time I smoked one. It was a 12 pound turkey and I smoked it in a WSM. ( no water in the pan since I wanted to reach higher temps 300-325 ) brined it over night and 4 hours prior to the smoke I applied the rub. Stuffed some butter and rub...

Welcome to the party Rick. I've only been here for a few months myself, but trust me you won't find a better bunch of people to hang out with.
I've learned some great tips and recipes here. Made a few friends too.
I'm sure in time you'll do the same. Just be patient with your cooks...some will...
Congrats on the new addition to your family.
Your yard looks like mine. My daughter says she might have to have an intervention for me if I get anymore grills or smokers.
Damn you Bear now you've done it, you made me drool all over the front of my shirt !!
Now I have to first change and then find some Dino's somewhere near me.
I made my first ones a few weeks back but didn't come out nearly as nice as yours ( had a way too heavy of a smoke flavor )
GREAT JOB...
Tuckola,
I understand exactly what you're going through. Newbie here myself. Here is what I did.
I found a "real butcher" ( not a supermarket, or a wholesale club not that there is anything wrong with them just really wanted to talk the the man doing the cutting) I asked a lot of questions...
I'm not mad at you for that. It doesn't matter how the magician does the trick as long as you happy with the results. So smoke on my wattburner friend !!!!
I've been a fan of SMF for awhile now, so I decided to join in the fun.
I'd like to thank everyone for their posts that have helped me tremendously so far.
From PA. Smoking on a WSM 22.5 ( I've even smoked ribs on a gas grill although I know it's cheating )
So thanks for having me :grilling_smilie:
