    Salmon

I just prepared 5 lbs of Alaska King salmon today on a cedar plank (several planks). I grilled about 3 lbs. and baked the remainder in a convection oven...on a cedar plank. Strange, although the salmon was 2-day old fresh from Alaska, the King salmon was drier than usual. The texture was not...

Joe: When making traditional Gravlox, I usually keep the salmon in Vodka for at least the first 24 hours. After that, you have to use a turkey baster and suck out alll of the fluid from the pan, including the Vodka. When the salt starts to cure the salmon, the flesh will release some fluids...

Hey Joe - We use about 1 cup of vodka for a 3 lb fillet. This is the classic way of making gravlox. No, we don't actually smoke the fillet. It is salt cured with the sea salt. However, I am thinking of doing a post-cure smoking to add yet more flavor. Jon

    Salmon ABT's

I have been experimenting with a series of fruit glazes from Wild River Grilling....peach and apricot. They are loaded with horseradish! The peach is really fiery hot. What a great combination with planked salmon. I can not believe how moist the salmon tuned out. I planked the salmon fillet...

    Cedar Planked Salmon

Does anyone have any great cedar planked recipes? I am looking for something new - bored with the herb rubs!

Joe- So how did that fillet turn out? Next time, try marinating the fillet in a bottle of vodka (ICE is my favorite) for 24 hours before smoking. An old family tradition.

    Smoked Salmon with Citrus Glaze

Gene- This Citrus Glaze sounds fabulous! I discovered another fantastic glaze from a company in Colorado....a fiery hot peach glaze based on world famous Palisade Peaches. I cedar planked a 3 lb fresh wild King fillet for a dinner party last weekend and it was da'bomb! The wife and guests...

Gremlin- Stay away from the units made by Polder. I have had 2 units malfunction in the past year. Both units were purchased at Bed, Bath & Beyond. I now use a model from CDN (Component Design Northwest) and it seems to work just fine.
