    Rec Tec or Woodwind?

For Rec Tec owners, could you place a cast iron pan in the grill with a touch of oil and use that to sear with?

Camp Chef Woodwind SG or Rec Tec RT700 Bull?

Ok. I'm trying to make same decision and was reading through these. How do you like the Rec Tec and how does the searing plates work?

Brisket: To dry brine or not?

I have done it both ways (apply rub the day before & waited until the day of) and have not seem to notice any difference. Rregardless, the next day I will take out of the fridge and sit at room temp for about an hour. Right before I place into the smoker, I will usually apply a little more rub...

    New build but no heat?

The fire box does appear small for the chamber. I think vents on the sides of the firebox might help build the fire and generate more heat, but most importantly, allow you to control your temps. Just about everything I know about building my smoker came from Dave, so he will guide you...

    Smoking 4 (10#) butts

Well, it turned out great thanks to you all! The only problem I have is now everyone at works think that I can cook. As long as you guys are available every time I cook, I'm in good shape. I was nervous, I have to be honest, cooking for 38 people (co-workers). On top of that I have been...

    Smoking 4 (10#) butts

SmokinAl, That sounds good. I'm expecting ambient temps to be in the 20's tonight/morning so If my cooking temps drop slightly, I know i will need a bit more time. I don't mind having to store the wrapped butts in a cooler for 2 to 3 hours before our company lunch, I just don't everyone waiting...

    Smoking 4 (10#) butts

YES. That was a typo. Sorry. I meant 225 to 250. seeing you responses, I will even go a little higher than that. What is the time difference between cooking one butt to cooking four butts? I plan to start this evening with the butts, and early morning for the ribs and chicken. I was going to...

    Smoking 4 (10#) butts

I would really appreciate all the advise I can get.I am not a first time smoker, but I only know enough to be dangerous! I am smoking 4 buts in my new homemade smoker (250 gallon tank - reverse flow).  I did a test burn yesterday and everything seem to work out great. Plan on cooking the butts...

    Exhaust Stack (Chimney) Volume

Thanks for helping me out on this. I also inseted my chimney a couple of inches. Dave also had a great idea about inserting a sleeve of rolled thin steel and trying different depths.

    Exhaust Stack (Chimney) Volume

Great info. Thanks. About how many inches did your stack go into the cc? Mine is also a 250 gal tank. I was planning on about 14 inches.

    Exhaust Stack (Chimney) Volume

OK, maybe a stupid question, but my exhaust stack will be inserted into the cooking chamber. My question is does the volume start on top of the cooking chamber, or does the entire volume of the pipe (including the portion inside the chamber) account for the volume? I am ready to make my cut on...

Smoke stack For 250 gal RF smoker

Do you guys think this will work for smoke stack: STEEL ROUND PIPE 6-5/8" o.d. x 9-ga PIPE BALLARDS.I have been pricing out steel pipe and it is very expensive. I also don't want to waste money on something that is not thick enough and/or won't work well. I would really appreciate your opinion.
