I have been using a 9" steel cake pan without any foil. I use small chunks 2-3" long and split roughly 1/2" by 1/2" and usually throw in some chips. I run 225-250 and never had them catch fire. It is not as heavy as cast iron so it does heat up pretty quick and I usually get smoke in 5-10 minutes.- slvance

Smoked scallops wrapped in prosciutto
I did some last weekend and brined them for ~30 minutes (added a dash of soy to the brine) and then wrapped in prosciutto. I had ones ~15 to a pound size. Tofu....Dear Lord!!!?
A couple of the Chinese places by me use it in the twice cooked pork. It is really good and much firmer than you see in regular tofu almost meat like. Might have to buy a block of firm tofu and try it.- slvance

GOSM Smoke Box Mod and TBS
I bought a two pack of steel cake pans 9" and use them in my GOSM and use wood that is 3-4" long and split about the size of your finger or so.
