    I would go with 1/8” aluminum diamond plate. 1/4” is a bit of overkill. If you want to go with stainless, the 1/16” would be fine with just the front edge bent down. That should stiffen it up plenty. In fact I think that’s what I may go with after all.

    Yeah I decided that 12 x 30 would be deep enough. As far as a source for diamond plate goes, I would just call a local sheet metal fabricator, they usually have drops left over from previous jobs and are usually glad to cut to size for you for cash.

    I just have a piece of 2 x 12 on it right now but I’m finishing off a nice piece of live edge Cherry to replace it soon. This is the folding shelf brackets I mentioned above.

    I just recently bought the Stampede and have done 3 cooks on it. I chose the Stampede over the bull partly because of the vent layout. The temps are so consistent throughout the Cook chamber, and I’ve read elsewhere that the stack at the right side of the Bull causes it to be cooler at that end...

    (smoke won't stick to wet casings)... If your sticks are drying out within a 4 hr cook... Then I can almost guarantee your smoker temps are not accurate (how are you measuring smoker temps ?)... Also... add 1/2 - 3/4 cup of non fat powdered milk (NFPM) to every 5 lbs of meat... Gotcha...

    I make mine with only straight ground Venison, no Pork added. I do as mentioned above, 10 degrees per hour to a 155 IT. Everyone at work raves about them, and virtually fat free. I use collagen casing by the way.

    Thank you everyone for your help! I have a renewed interest in making this happen. It’s just a bit frustrating getting the chicken skin crispy when I’ve had such good luck with every other kind of meat that I’ve done.
