Yes the venison fat is not good. But some people at beef or pork fat when grinding venison. That's why I asked if it had any fat mixed in. -

When using venison, is the venison lean or have fat mixed in? I will be grinding my own and I remove all fat and silver skin. Is there a different ratio for ground beef when using fat free venison?
