I have a Model #2 and love it. I've had it for over a year and a half. I've probably done 60-65 smokes on it. To be honest, I've never had to add extra wood. I've done some pretty long smokes (15 hrs or better with some pulled pork, etc.) and by the end I may just have ash, but it still...
I struggled with my ribs in my Masterbuilt too. They were always just "ok". I would always do a 3-2-1 or 2-2-1. I tried that in my Smokin-It #2 a couple of times then realized quickly that there is no need for that. St. Louis Style or Babybacks.... just throw 'em in and let the smoker do...
I grabbed a Smokin'-It #2 to replace my Masterbuilt and haven't regretted the decision one little bit. It works perfectly for my needs. Obviously, everyone has different needs, but definitely give the SI some thought. Good luck with your decision either way. Cheers.
Thank you so much. Yeah, it's been pretty cold around here as well. I think it was 16 degrees when I smoked this on Saturday. At this point I don't mind smoking year round. Now, that may change as I get older!!! ;):)

Tried smoking salmon for the first time on my #2.
I had tried salmon a few years ago on my Masterbuilt and it didn't work out too well.
Well, this time it turned out great.
Used the trusty brown sugar/kosher salt "brine". 4:1 ratio.
Brined for 6.5 hours. Let it form the pellicle for 2 hrs...
Wow!! Obviously, you have put some major time and thought into your woods!!! That's awesome. I'm still just getting my feet wet with experimenting so I have a lot to learn. I'm sure going to have fun trying however. I'm really looking forward to smoking with Oak. I've never used it before...
