    I have the 1 HP Cabelas grinder and bought a foot control which enables me to do it by myself easily. Never been dissappointed yet with the grinder after 3 years and multiple deer ground.

    I always use warm water in the pan put in when I turn my Mes on. For sausages I usually only put about 1/4 inch in the pan.

    I vac packed then froze them and have been using 10% with seeds and all, run through the grinder with the meat. It does come out fairly spicy but most enjoy and don't think it is too hot.

    It all looks good. I cut my snack sticks to the lengths of the Mes 30 trays and then rotate the trays and sticks to keep from drying out.

    Recipes and time for smoking fish

    We liked it best when brined then smoked. Lemon pepper or a citrus rub was good. 30 - 45 minutes will cover most fillets. Good luck and hope everyone enjoys it.

    I agree that too high of cooking temp gets your sticks out of the smoke too fast. You can also try adding a teaspoon of liquid smoke into the meat and seasoning before mixing to help get smoke flavor all the way through.

    I like to use 1 pound of thick, fatty bacon to 4 pounds of venison for sausage and everyone seems to like it.

    I agree with temp stability and helpfull moisture, always use pan with water for mine.
