I don’t use the water pan at all drips go into the coals. I want my heat and smoke to come straight to the meat not being deflected in other directions by anything. I did notice a difference between laying ribs flat and using a rib rack. The airflow seemed a lot better using the rib rack as it...
Most importantly don’t spread the hot coals... turn chimney over and pour hot coals onto a bed of coal... it will spread evenly on its own... and give you the length of burn you want. think that’s your issue
I have used the 18 wsm for the last year made some great food really a great unit. I used it about 75 times. Use the amount of coals in the chimney to determine how fast you want it to spread. Don’t scatter the hot coals keep them in the center together so when they burn outward the fire...
hi all, just occurred to me that I have been smoking with the drain valve open... is this correct? Thank you for your help. Seems like closed would keep things more stable and not suck in outside air... but fat and grease Setting up in a pipe sounds like it could get nasty... maybe run with...
Hey everyone. I just finished cooking 25 chicken quarters on my Lang 36 for the guys at work on my day off mind you I’m sitting out back keeping the fire alive after steam cleaning and figured it’s a nice night to enjoy the fire. Figured I’d post a review of my Lang after 3 cooks. I was on the...

If you were going to cook chicken breast would you put on top rack or bottom, if the temps were the same. Am I correct in thinking the smoke will be more at the top for a good bark?
Thank you for all the help I definitely will be using the wood surrounding the coal setup. Looking forward to learning from you all. Does it run similar when it’s fully loaded, half full, or a few small things like sausage and bacon? Just curious.
Thank you. I first time I used it I only used wood splits and it took a while to get the fire settled out and the coal bed to be big enough to maintain temps as I would toss one split in here and there. After the smoker it’s self warms up and maintaining a small fire... toss one split on the...
just sent my days off playing around with the Lang 36. Sprayed with olive oil, warmed it up, sprayed with hose, and then let her smolder. Really is a treat to use and I definitely have a lot to learn. Might do more small cooks until I get it figured out. Heat zones, temp control, fire...
