I just came back from Memphis in May and tried out a few places while I was there. I would have to say that Central BBQ was my favorite, with Corky's a close second. I think Central uses primarily applewood or another fruit wood, the ribs were nice and tender with a little pull to them...
I recently got a 24" vault as well and have found that putting soaked chips in a foil pack before placing them on the tray works pretty well, although I haven't had a chance to try chunks yet. I just wrap a couple handfuls of chips up in some tin foil, make the whole thing flat and about 1"-2"...
