    Oak Wood Salmon?

    What type smoker do you have? I have never tried oak on fish but you will probably be o.k. as long as you don't pour the smoke on too thick.

    I almost always set my MES to 275 unless I'm doing fish, sausage, or bacon. Ribs, butt, brisket, poultry all get 275.

    The last 2 years I did turkeys. This year my Niece offered to buy pork butts to do so that's the main dish. Served with hoagie rolls, cole slaw, Dutch's beans, fruit salad, and Oregon grown strawberry shortcake for desert. 19 people total counting kids. My Bro in law smoked a turkey yesterday...

    We always tried to go after Labor Day when the crowds thinned out. We stopped going there in the early 90's and started going to Tenmile Lakes over on the coast. Had some great times over there fishing the lake and crabbing in Winchester Bay.

    Great  times Case. I love that area around Billy Chinook. We used to camp at the cove and hunt deer by boat up the Deschutes. Set crawfish pots on our way up the river and pick them up on our way back to camp. Nothing like a meal of fresh crawfish and kokanee.

    Yes but it say's "loin stirring"!  What's the going rate for having your loins stirred these days? I'll take some good old Willapa Bay oysters from Washington any day.

    I just went and checked the smoker you have. The youtube video I watched say's to use methylated spirits which is denatured alcohol for fuel. Here is the video I watched. Here is another video
