My version is breakfast sausage wrapped around creme cheese/jalapenos. Wrap it in bacon if you want. Can't go wrong with bacon.
One trick usually do is dice the jalapenos and mix with creme cheese. After that mix cools in the 'frige, roll that into balls about the size of a large marble...
Get your game face on and let's see your favorite Super Bowl appetizer.
We just managed to secure the Denver win with these. Dragon eggs and jalapeno boats. Jalapenos, cream cheese, little smokies, wrapped in bacon, smoked with mesquite chips. I have an MES 40". Set it to 250. These bad...
Wow! Great idea with the beans! My wife has a killer baked bean recipe and adding the meat from the riblettes would totally kick it up a notch. Already have the menu lined up for the playoffs tomorrow but theres 2 racks of spare ribs in the freezer.
Hey Matt,
I had some problems with my MES 40" this weekend as well. I've had it for a couple of years, and am used to the oven temp and the temp setting being different. There's tons of posts and some really good research that's been done. Basically, set your temp a little higher and monitor...
I just had a Scotch Egg at a pub tonight. I can't believe I have lived this long without trying one. It was fantastic!
Been scanning through the threads and will be trying some this weekend. I am going to use some eggs I have pickled. There's a few mentions of that by other folks so its...
Ditto on not having to add chips for a long time. I love the AMAZN unit with the MES 40". Besides long smoke time, it lets me cold smoke when I want to. Perfect for cheese and salmon.
I have a 40" with the remote that I purchased at Cabelas. I'm totally in love with it. I've done a bunch of different stuff (nuts, cheese, pork butt, ribs, etc.) but don't consider myself a master at any of them.
Ditto what Chainsaw said about having a LIFE. I can check the oven temp and...
Yep. Wide open.
I think I am going to go with the mail box idea. I need to smoke 4 big salmon filets this weekend. The pix will come next week. I still need to upload the pix from doing jerky out of eye of round.
Smoke on!
I got an AMAZN smoke generator and it doesn't do so good in the MES. The MES web site mentions the issue and recommends pulling the chip loading tube out and oull the chip tray out a little. The only way I got it to smoke completely is crack the door open. That's ok for cold smoking, but not...
Looking real good!
I just finished a batch that started with Hi Mountain Pepper mix. I was going for teryaki but the store I went to didn't have that flavor.
I mixed up a teryaki sauce with soy, pineapple juice, brown sugar, and ginger and let it simmer until it was thick. After the jerky...
I just picked up some jerky racks for my smoker so I am headed down the same path you are. I have heard of Morton Sugar Cure, but have not found any recipes with it or heard of anyone using it.
