I get primal cuts (full rib rack) from my butcher and want to find a way to store them in my meat fridge w/o using plastic bags or butcher's paper wrap. I've heard of people using cheese clothes & cotton t-shirts. Any tips?
Ive read the thread about dry-aging at home with standard fridge - how about one of these for mobile living? The are very stable with temperature and can easily get down to below freezing so holding a 1-2 degree Celius for aging isnt a problem...
