So it is possible or is my thermometer off

11 lb packer brisket cooked to 195 in only 7 hours. Smoker fluctuated between 235 and 275 because of inclimate weather. Mostly it was in the 245 to 255 range. I was planning 12 hours of cooking time. Is it possible that it cooked in such a short time?

    Told I can't do that

I did it anyway. Got to say I'm a little nervous about leaks but its done. Love the needle valve. I will be cooking a brisket tomorrow

    Told I can't do that

Guy at propane place said that I can't replace the existing hose and regulator with a 10psi because that is high pressure and the existing one on the gosm is low pressure. What do I do

    More power ruff ruff

I bought a set up off of amazon that has a needle valve and 10psi. I was thinking I should open it up but if I don't need to I won't. Apparently the female end doesn't match the male in on the smoker. Guess I have to do some splicing.

Sorry most you g people will have no idea what that means. Anyway, does it make sense to power up to a 15 or 20 psi regulator for my gosm gasser?

Why all of a sudden wont gosm gasser get above 203

I have smoked 4 times with it and never had an issue with it heating up. I ran out of fuel and bought a new tank. The thing won't get above 203. It is a little windy in Utah today but nothing this thing shouldn't be ale to handle. Do you think it is the new tank that is causing the issue?

First run on the gosm. Mixed feelings

Smoked ribs and chicken (thighs and legs). Love the ease of use of the gasser. Once I got the feel for it I was able to keep the temp very consistent. S I took my son to an Italian festival for a couple of hours. I came back and the temp dropped to 163. Not sure why it happened but I got it...

Isn't there an easier solution for the needle valve mod?

Would I cut the hose and splice the needle valve?

Isn't there an easier solution for the needle valve mod?

I have a gosm, just got it Monday. I want to do the needle valve mod but I'm not handy enough to do it myself. Does anyplace sell a ready made kit? One where I can just connect it to the smoker that already has the needle valve. Thanks for any advice
