Weber SmokeFire - anyone get it yet

Thanks for the info on the new Bullseye, that looks like an interesting grill and adds another option to my search. I probably should state that winter here in Northern California on the coast doesn't quite mean a real winter as far as temps go...

Weber SmokeFire - anyone get it yet

I am in the exact same boat as you - I was waiting to see if the SmokeFire was going to actually work. Apparently it is a good thing I waited. I am looking for a pellet grill to add to the cooking arsenal. This will be our winter cooking "grill" and weeknight grill, as our outdoor kitchen isn't...

Memorial Day 2017 - Best Pork Shoulder Hawaiian Style

Finally for sauce: This weekend we used a NOH Hawaiian Bar-B-Q Sauce - that I also add some yellow mustard to. I also add some dill pickle slices.  ----------------- I am planning on making some pineapple pickles (think bread & butter style), for our next BBQ.

Memorial Day 2017 - Best Pork Shoulder Hawaiian Style

We used a "Island Slaw" recipe that I created after trying to recreate a nice slaw we had on the Big Island at Tommy Bahamas. The original slaw at the restaurant used a slightly sweet lemon dressing and thin jicama strips - I have switched to a pineapple balsamic dressing and typically use fine...

Memorial Day 2017 - Best Pork Shoulder Hawaiian Style

Thanks for the idea on some pineapple juice for reheating - good idea... I found guava wood from a seller in Hawaii - originally I was hunting for some Kiawe wood (Hawaiian Mesquite) and the seller also offered guava wood which sounded a little less intense. I purchased some and really like the...

    Newbie looking for some help

Hey, just wanted to follow up with a winter reply.  Thanks to the amazing advice here we have been able to enjoy our summer smoked salmon thru the holidays.  We just finished up one of the last salmon filets I had help smoking over 6 months ago. In hindsight I think it is better now after being...

    Newbie looking for some help

Oh and I brined in big tupperware container, but put the brine in a gallon bag that held the previously frozen fish, thinking I might as well toss it int he freezer for the next brine. You know that 1/2 cup of salt and 1 cup of sugar is pretty expensive :)

    Newbie looking for some help

Thanks again so much for the help. I think I have a better handle on things - I will attempt to do it a little different next time.  Putting ice under the fish is a great idea (will also keep my wife from wondering if I am trying to poison her). Fingers crossed it works a little better!  I...

    Newbie looking for some help

Thanks everyone - I guessed my issues were mostly due to poorly formed pellicle.  Good to hear chips are OK as I have a large assortment of them.  I think I might transistion to some chunks to see if they preform more uniformly in my smoker in the future. By the way AKhap I think on Saturday...
