I will leave the advice to the "Pros" like Eric regarding the "hella" big bird (my kids' slang). I just had to comment on your avatar as I am an "old" rugger and its cool to see youngsters carrying on the game. I assume that is a picture of your son...but maybe not?! Anyway good luck with the...
I smoke on a weber because I just find its faster and more consistent temp. although you don't get that cool smoked flavor. My wife says its too intense...oh well. Recently did some pork ribs, chickens and quail for our NFC game feast. Unfortunately we couldn't also celebrate a Niners win...
As usual I am in awe of your ability to work with your ingredients and the whole smoke process...ah wisdom!! And now my taste buds are jonesing to try out your rub.

Ok now I am also on the hunt to try some other really good bourbons. Just thinking about tasting a new sipping bourbon with a little BBQ has me planning a long bike ride to get in shape to stave off the anticipated waist expansion. Oh and BTW to top it off a light smoke with some tasty...

Eric:
If you see a double reply from me its because I initially sent it from a table and wasn't sure that it was sent and wanted to make sure that I thanked you. Despite the anticipated problems with this model of smoker and I will try and forge ahead this morning. I guess I'll find out why...

I live in San Rafael, CA about 17 miles north of San Francisco. I was inspired about trying smoking as Danish friend was smoking salmon at his holiday party and another friend brought a salmon to Christmas dinner that she had cured herself. Plus I am trying to keep up my limited...
