Thinking on getting rid of my pellet smoker. Opinions?

I am on the fence as well. I love the thought of the convenience of a pellet smoker but still haven't pulled the trigger due to the lack of smoke flavor you speak of. My buddy uses a pellet smoker and always reminds me that I like to use my ceramic grill for cooks as I seem to get a better...

    33 Pounds of Italian

Nice looking batch of sausage. I made a 5lb batch last week and homemade Italian sausage is so much better than the store bought stuff.

First time bacon...unsure of curing process!

    Last haul of the season

I have 2 gallon bags of dried whole peppers in the pantry. I am sure my wife thinks I have a problem with peppers, fermenting, hot sauce, and pickling (among other things I am sure). I like to add the dried habaneros to pickle jars and makes for a most epic pickle!

First try to ferment hot peppers

Are you wanting to just put a lid on your counter fermented peppers and put them in the fridge? As long as you had let it ferment for a few weeks or so on the counter it shouldn’t be that active any longer and putting it in the fridge will cause that bacteria to become dormant and not produce...

    Last haul of the season

Probably last haul of the season: jalapeños, yellow habaneros, scotch bonnets, chocolate habaneros, and reapers. I don’t know what to do with all the peppers from this season. I have 4 gallon zip locks in the freezer full of various peppers and that’s after making batches of hot sauce, pepper...

First time bacon...unsure of curing process!

I by no means am a bacon expert, but when I did my first bacon I thought the same thing. I know I measured correctly with the cure but the doubt creeped in if I had done everything right. I had very little liquid in the bag after 10 days, but did the same thing and rinsed them and then soaked...

First try to ferment hot peppers

I wouldn't recommend re-using your CR fermenting liquid again unless you are going to ferment more CR. That fermenting liquid is serious fire water. I fermented a batch of jalapenos, chocolate habaneros, and scotch bonnets (along with some onion and garlic in both jars) and threw in 2 small...

    First Round of Bacon

I love bacon! Everyone loves bacon. I found myself at Costco every couple of weeks buying the 3lbs worth of bacon they offered and just disappointed every time and swearing I wont do it again. So, next time I decided to not buy the bacon but instead go back to the meat department and buy a 10lb...

    Hello from FL

I am a recent retired Navy vet and have been smoking in a ceramic grill for about 5 years now. I really enjoy trying new ideas and new cuts of meat. I am about to undertake my first hot smoke bacon, due to Florida’s raging heat. I froze 19 lbs to cold smoke when these temp lightens up. I have...
