    I appreciate the share, Bilbo!   However, I use my own which is very similar to yours except I add some cinnamon, rosemary sprigs and a 50/50 mixture of garlic powder/onion powder. Edit:  I also vacuum seal my rub after every use.  Virtually eliminates clumping that way. :)

    This is how my ribs turned out after switching from water in the pan to sand.  I will NEVER go back to water again!  Here the ribs are after about 2.5 hrs. And after the final smoke: Ready to eat!

    First KCBS Competition ButtBrosBBQ

    Since you took notes, I'm curious as to what you learned/would do differently for next time?   I'm seriously considering entering some competitions and was wondering about your experiences.

    I couldn't agree more!   Fall-off-the-bone ribs just suck!  Ribs are supposed to be chewy, but not tough!

    I agree.  I think the calendar thing would be a fantastic idea!  I live in SE WI, and the closes competition, that I know of, is Grillin in Grafton (which I know is KCBS sanctioned, and not amatuer.) I think the amatuer competitions would be fun, and a great way to meet new quers!
