    Pretty ambitious to start smoking with a smoker you are going to build. I started with a kingsford charcoal smoker i bought used off craigslist for $30. Enjoy the site, and especially the food you make!!

    I recommend starting with jeffs rub and bbq sauce and try some of the newsletters. The forums are great as well. I think i have only had one smoke that i felt was bad, it was chicken and i  just oversmoked it .

    Welcome, I also have an MES 30 and i am very happy with it, I have the AMPNS also but havent used it . I only started smoking end of last summer and I have really enjoyed it, even during this cold winter I have smoked quite a bit of meat in my MES30.

    Chuck Roast Smoke (last weeks newsletter)

    The vegetables were great, tender and sweet. I used only bell peppers, and red onions. I put the roast on top of the vegetables when it was at 154 internal temperature. I poured 1 cup beef broth on the vegetables, but dont think i needed to, you can see there is plenty of juice.
