    Wild Hog leg

Has anyone on here smoked a ham from a wild hog? Don't know if you do anything different than from a store bought Boston butt. I have a wild hog that I got last week and want to smoke a ham and have pulled pork for Christmas dinner. When I clean her, I left as much fat on the ham as I could...

    hit up winerys for bottles

I make beer mostly now, but years ago I made a lot of wine and would hit up the winery for free bottles. They were mostly in cases next to the dumpster. Smoked Duck

Killed a few mallards last week.  Picked feathers off two ducks and have them soaking in salt water over night.  I plan on scoring the skin and loading the cavity with apples and orange peals.  Put those patos in the smoker till IT is 165.  I'll take pictures if I can remember to do that. Hutch

    Salami Question

MDs51, would you want to share your recipe for the salam de cot?  Btw, I grew up in an Italian family and my grandma had salam hanging to dry in the cupboard.  I was just a kid then and wouldn't have thought to ask her about temperature for hanging.  They tasted pretty good as I remember. Hutch
