I ended up scraping it out as best I could by hand. Then I sprayed on a good coat of Easy Off and scrubbed it and sprayed it out with water. Feels good to have a smoker again.
I don’t think I’ve ever gotten off a transatlantic flight sober 😆 it’s so long and gets boring. I was stationed in England from 2009-2012 and have made that flight so many times. Anytime you think of coming to Sicily, it’d be a pleasure to host you for a night. How’d I get here? Kind of... -

Brisket - Simplified and Reliable Dinner Timing
Re: holding, when folks do this, is the whole brisket literally wrapped in towels? I.e. it's direct contact, brisket-to-towel, not also in foil or paper or something else between the meat and the towels? That doesn't dry the meat out a little? -

Also - re: creosote buildup, aren't there logs you can burn to burn off all the creosote, like in a home fireplace? Would that work in a smoker?- Operator

Thanks, guys. My old pup has approximate 14.5yrs now. We used to live in Virginia. Here's a photo from then, around 2021 or so. P.S. The no-wrap ribs turned out terribly. I'll have to practice more with that style. Then again, my wife and I both love FOTB, so we might stick to 3-1-1. Whatever. -
