    Struck gold (again)

I ended up scraping it out as best I could by hand. Then I sprayed on a good coat of Easy Off and scrubbed it and sprayed it out with water. I’ve got a bottle of seasoning oil for cast iron, so once it was dry I painted it with that and a cheap paintbrush. Just sitting here now after having a...

Feels good to have a smoker again.

I don’t think I’ve ever gotten off a transatlantic flight sober 😆 it’s so long and gets boring. I was stationed in England from 2009-2012 and have made that flight so many times. Anytime you think of coming to Sicily, it’d be a pleasure to host you for a night. How’d I get here? Kind of...

Brisket - Simplified and Reliable Dinner Timing

Re: holding, when folks do this, is the whole brisket literally wrapped in towels? I.e. it's direct contact, brisket-to-towel, not also in foil or paper or something else between the meat and the towels? That doesn't dry the meat out a little?

    Struck gold (again)

Also - re: creosote buildup, aren't there logs you can burn to burn off all the creosote, like in a home fireplace? Would that work in a smoker?

    Struck gold (again)

Good to know - so, why does the stack even have one, if that's the case? Maybe for foul weather or for when not in use? Yeah I did. I'm glad I waited and didn't buy them all new like I was planning. I would've missed out on all this. Me too, I've never used a drum before. The idea of being...

    Struck gold (again)

Well folks, it happened again. Maybe you saw this thread. I was already pretty happy about that. Well, I also just landed an OK Joe Highland and Bronco for $140 total. There's a military family a few houses up from me here who are PCSing. They listed them on the local FB group for this and I...

Feels good to have a smoker again.

Thanks guys. Yup, I love my cooking buddy :-) I was in Virginia post-Navy and worked there for a job that eventually moved me to Seattle, then I married a Romanian lady and moved to Romania, then got a job here in Sicily and moved here, so it's been lots of flights and moving. Sure has been an...

Feels good to have a smoker again.

Thanks, guys. My old pup has approximate 14.5yrs now. We used to live in Virginia. Here's a photo from then, around 2021 or so. P.S. The no-wrap ribs turned out terribly. I'll have to practice more with that style. Then again, my wife and I both love FOTB, so we might stick to 3-1-1. Whatever.

Feels good to have a smoker again.

I used to have two pellet smokers (Camp Chef and a Traeger) and an OK Joe Highland, but sold them all when I had to make a big move. Now that I'm settled again, I tried getting some new toys to start over. I figured I'd start over with the Highland. But, in trying to do that, I managed to...
