You shouldn't need to add more wood. After the first few hours the meat doesn't pick up mich smoke. Google kamado and guru for a site that's just for kamads and is very active.
No i never use a water pan in the kamado its not needed . I only use a foil pan to catch the drips on messy cooks or for creating sauces. If i do a brisket or pork butt i make a gravy with a drip pan filled with onions, carrots, garlic and stuff with a little water. In a kamado you have a...

I have a cheap masterbuilt propane smoker and a vision kamado. For me it's no question it's the kamado. It's just to easy and the results are to good. I use it at least 2x a week cause i can also grill chicken and steaks and burgers oh my.
I had a hard time getting TBS with the propane smoker...
Don't buy there heat deflector, try this instead the Deflector below from ACE Hardware. I am using it after doing a lot of reading on line and it's the one most people get. This heat deflector is awesome and really handles abuse well. It doubles as a pizza stone. I've made some of the best pizza...
It's an awesome grill. I paid double that and I'm very happy with it. The link above was one of my cooks. I can't say enough good stuff about this grill. The reviews everywhere were great which is why i bought mine and they were correct. Kamado cooking it fantastic. I had my sons birthday party...
I sealed my bottom vent when I first got my kamado and have been able to hold temps as low as 175 if I start with just a couple of lit coals. My problem with my last brisket was I over cooked it. I was awake something like 30 hours by the time it was done and passed out not realizing my...
Hope you enjoy the kamado, I've found mine so easy to cook on, that I couldn't justify the cost of a party-q. My kamado holds the temps so steady there really isn't much for me to do other than drink a beer and relax, which is just fine by me. The brisket looks great.
This looks great. I've been kinda hesitant after my firs brisket on my kamado overcooked a bit but I think I'm going to try again soon. I love cooking on my kamado.
I have a vision kamado similar to a bge and I love it. It's so versatile. I can grill burgers ,steaks or home made pizzas at high heat or I can lowand slow ribs ,butts and brisket. It's easy to control temps once you get the hang of it. I've done 16 hour cooks and still had plenty of coal...
Mike I cook on a vision kamado so it's just like what you are using and you just need to cook longer and let it rest. I don't foil, I don't use a water pan, I just let it cook between 225 and 250 untill IT of around 200. Did you have a heat deflector, in place so that the heat was indirect. Here...
