    Injected with apple juice and some of my rub.  Put rub on then let sit in fridge overnight.  Took Jeffs rub and tweaked it to our liking.  Put in Masterbuilt XL smoker at a temp of 275.  Used apple wood chunks and cherry wood chips.  Ran smoke for 5 hours pulled at IT of 157 and put in foil pan...

    Need help: Beef Top Round Roast

    I would take it to medium and slice it.  This is the same cut that delis use for their roast beef.

    Baby back rib and chicken leg quarter

    Around 260, had in for 2 hours with smoke for most of that time. Then took and wrapped the ribs in foil with brown sugar and butter, put the leg quarters in a foil pan with some chicken broth and covered with foil for another hour. The last hour the temp crept up to around 275.

    First try for Pastrami

    I used packaged corn beef. soaked it in water for a couple of hours the night before to remove some of the salt, then covered with plastic over night.  Then put a rub on that had brown sugar, black, pink, white, green peppercorns, mustard seeds and minced garlic.  Cooking temp tried to keep it...
