    Using a Weber Kettle 22.5, I've never had a need for one. You can smoke on the kettle right out of the box. Lots use em and love em though.

    It's not a major weather event unless someone in the family is outside tending a fire/meat. 18 below is where my record stands I believe. Steaks for 10 or so folks in almost 3 feet of snow. 14 more inches fell as we were finishing the steaks.

    Smoked two butts overnight. 12 lbs total. used less than a 13lb bag of KB. Smoked from 1am to 2pm. Still had at least 4 hours unlit when I pulled the meat off.  This is with a Weber kette.

    Thanks for the feedback.  Will always go by internal temp, just want to be able to allow for enough time for it to get there. If I allow for 2 hours per pound, I know when to start really eyeballing IT instead of smoker temp.  I only have a single probe therm so it has to do double duty.
