    MES 35b wood chips do not turn to ash

    I have a Pit Boss. My chips never turn to ash. I figure some types will and some won’t. After mine turn black and stop smoking I empty the tray and add fresh chips. I never have worried about it. It took me by surprise at first but I just roll with it.

    So they sent me a new temp probe. At 225 on their probe I am at 239. Probe is within about 2” of theirs. At 270 on their probe I am at 340. I called them back and they are sending the control board.

    So do you leave the chips in until they are all chard or will eventually turn to ash? I don’t see any smoke coming out of the smoker and my chips are all black yet still appear whole for the most part.
