Butcher ordered these for me - short plate vs. back ribs. They were 6.28/lb. which was a deal for around here actually. Checked elsewhere and found them as high as $10/lb.!!!

Good morning, folks...My butcher came through for me this week with some nice beef short plate ribs at a decent price.
Guessing anywhere from 6-8 hrs on this cook. Simple kosher salt and coarse black pepper rub, over post oak and hickory @ 275 degrees. Will be updating throughout the day.
Thanks. Yeah, about the brisket - the cheapest I can find around me - and at least an hour's drive - is $4.69/lb. That's as high as I'll spend. When they go up again, I'll just not do them unless I'm gifted one. It's disheartening to see the prices continue to climb (on pork as well).

As noted in the pork forum, I purchased a new Kamado Joe (Big Joe) recently at a nice deal and have been cooking like crazy in it ever since....here was my first beef cook - short ribs (one of my favorites)...they were very good, not my best, but very good nonetheless. Strange thing...
