    I left one of my smoked pork butts wrapped in towels in my cooler overnight (by mistake) it is now 125 degrees. should i throw out or is it safe to refridgerate it now, thanks

    I did not brine the turkey but did inject it. I did not look great when it was done but it tasted great.

    Just joined, have a Pitts and Spits 2436 with firebox. Have been smoking for about 4 years. HAve Brisket, and pork butt figured out but continue to destroy turkeys on this big smoker. I usually use all wood (oak or almond) Think I may need to go to charcoal for the birds. Or maybe my brickman or...

    I just read about your labor day smoking and wondered about the adding of burned logs. I use a larger water smoker with a firebox but just put fresh logs in all the time. can you explain your process? thanks mjr
