    Good point on the brisket. I will be carving and plan to hot hold and pull as needed. I have a lot of smoker space and am planning on doing most everything on them.  With the beans I plan on a 4oz serving per person or roughly 57lbs for the 225 people.  I round up based on package quantities.  ...
