That holds true no matter how you're cooking. Like the other folks said, get a good set of thermometers and cook to temperature. And don't forget about the time needed to properly rest meat after cooking.

Thanks. I still have my MES30, but it hasn't been used since getting the RT. I really enjoyed it, just starting to wonder if it's time to find it a new home.
No worries. Their stuff is good but rarely cheap. They do have a less expensive unit called Smoke which is popular, but you need an additional piece to give it WiFi.
Come to think of it, Thermoworks has a sale right now. 20% off a single item. You can get Signals with 4 probes for $183 + shipping. I've had my eye on it for a while, just been spending a bunch on other things. They have periodic sales didn't the year, too.
I have an account and made sure I'm signed in. For some reason the codes still don't work and their support haven't figured out why. Phoning is less convenient but I can still order with the discount.
