What Did I Do Wrong ?

"Meat can't tell time." That holds true no matter how you're cooking. Like the other folks said, get a good set of thermometers and cook to temperature. And don't forget about the time needed to properly rest meat after cooking.

Featured Purchased a smoker for the hubby and need advice/input!

An MES30 is a solid choice to get started in smoking. It produces good food and holds temperatures well. Things to look out for have already been mentioned: the built-in temperature probe is inaccurate, and adding chips manually can get old. These can be overcome without a big expense, using...

    LIVE REAL RACING!

Kyle Busch contacted the wall, pulling off an adhesive banner for Blu-Emu. Pieces of it wound up getting stuck to a couple of cars. Had to throw a caution to pull off the rest of it. Wacky scene.

It's the same one I have - which doesn't reach indoors very well. I've asked if hers is better - could be different than mine.

Thanks. I still have my MES30, but it hasn't been used since getting the RT. I really enjoyed it, just starting to wonder if it's time to find it a new home.

No worries. Their stuff is good but rarely cheap. They do have a less expensive unit called Smoke which is popular, but you need an additional piece to give it WiFi.

Do you get a signal inside the house with yours? Mine drops the connection unless I hold it up to a window. Rather disappointing.

Come to think of it, Thermoworks has a sale right now. 20% off a single item. You can get Signals with 4 probes for $183 + shipping. I've had my eye on it for a while, just been spending a bunch on other things. They have periodic sales didn't the year, too.

Free shipping on any AMAZEN order.

I have an account and made sure I'm signed in. For some reason the codes still don't work and their support haven't figured out why. Phoning is less convenient but I can still order with the discount.

Thermoworks has a couple options too. I think Inkbird also makes one. I don't have any first-hand experience with them, though. Tried a Bluetooth model and I had to hold my phone to a window to get a signal - disappointing, so WiFi is the next option.

    Vietnam Commemorative Knife. (By Gerber)

It was actually my birthday, now that I think of it. Nice way to spend a day, honoring my friend's dad and other veterans.

For some reason their discount codes don't work for me. Tried asking their support, but apparently I'll have to order by phone. Looking to pick up some Q-Matz.

    First Meatloaf-Need Advice

Personally I'd cook the onion and pepper unless you're doing a fine chop. I don't mind a little crunch from onions but others might. You'd cook it at a higher temp if using your oven, so 275-250 should be fine or you can go lower for more smoke. Make it moist to start to avoid drying out. Enjoy!

Thanks! No wrap, no sauce. Just simple rub + smoke + heat + time.
