    Has anyone out there smoked just a turkey breast?  Did you brine it and use a rub on it?  How long did it take?  I'm doing this for Mother's Day and will be in deep doo-doo if I don't get it right. Thanks for any help mgsteve

    I do a lot of woodworking and save all my cherry and maple pieces.  I use a bandsaw which makes short work of the pieces.  I think that larger chunks work better than the smaller stuff you get from a chipper.  They burn up to fast.\ mgsteve t

    Thanks for all the info. I did a pork butt yesterday and was happy with the results. I had a helluva time keeping the temp up in my Brinkman gourmet smoker. I was really starting to panic.     I want to smoke 1/2 brisket and a pork shoulder.  Can anyone give me approximate times.  I get confused with all the different info I'm seeing.  I would like to do both at the same time.  I thinking about putting one on the upper shelf and one on the lower.  Stevea

    Man, those tips are GREAT!!!!  Have you tried to seal the door on the side of the unit?  It looks like you don't use the thermo. on the unit.  Do you use a digital?  Is that the probe in the picture?   Thanks again Steve

    I received a Brinkman gourmet smoker for Christmas and have used it once.  This weekend will be a picnic for unsuspecting "victims"   We love BBQ, but didn't realize it was quite as involved as it seems.  anyway, we'll give it i"a go" and hope for the best.

    Can anyone tell me how long to smoke a pork shoulder and brisket?  I'm using Brinkman gourmet charcoal smoker.  I would like to do both at the same time.  The thermometer that comes with the unit only has 3 temps.  warm, ideal, and hot.  Is the "ideal" setting 250 deg?  the 1st time I used it...
